How to make a Oolong Lavender Tea Gin Sour

INGREDIENTS
Make a Oolong Lavender Tea Sugar Syrup:
1-2 teabags of 3:15Pm Lavender Oolong Tea
1 cup sugar
1 cup water
Oolong Lavender Tea :
50ml London dry gin that has been infused with butterflypea flowers to turn purple/blue
25ml lemon juice, freshly squeezed
12ml Lavender Tea Sugar syrup
1 egg egg white, aquafaba or other cocktail foamer eg Mrs Betters Bitters
Instructions:
Make a Oolong Lavender Tea Sugar Syrup:
1. Boil the water, add sugar and stir till dissolved.
2. Add teabag to the syrup and leave to steep until cold.
Oolong Lavender Tea :
1. Add gin, lemon juice and sugar syrup to a cocktail shaker.
2. Add egg white or other foamer
3. Dry shake
4. Add ice and wet shake
5. Strain into a cocktail glass
6. Garnish with a lavender sprig
