Instructions

  1. Rinse the sago pearls in cold water until the water runs clear.
  2. In a pot, bring 1 cup of water to a boil, then add the sago pearls. Cook for about 15 minutes until the sago pearls become translucent, then rinse them with cold water and set aside.
  3. In a separate pot, bring the coconut milk to a boil over medium heat. Add the sugar and stir until the sugar dissolves. Turn off the heat and let the coconut milk cool to room temperature.
  4. In a bowl, mix the sago pearls with the cooled coconut milk and diced fresh mango.
  5. Pour the mango popping boba over the sago, coconut milk, and mango mixture and a few ice cubes.
  6. Top the dessert with fresh pomelo pulp, mango popping boba and mint leaves
